Summer Family Fun: Make and Experiment with Giant Homemade Bubbles

The mere sight of a bubble floating by overhead can make even the most harried person stop and smile. Part science, part wonder, a bubble is simply a thin skin of liquid surrounding a gas. But you needn’t know any bubble science to enjoy this fun and inexpensive activity. Best of all, bubbles can be made using ingredients you have around the house. When the weather’s nice, I often make a bucket of bubble solution and leave it outside with wands and other fun equipment so my daughter and others can make bubbles whenever they like. It’s always fun and magical to create bubbles and run around to watch them trail behind you in the breeze.

Recipe for Great Bubbles

There’s no need to spend money on commercial bubble mixes. The best mixes come from ingredients that are inexpensive and easily available. A large batch can be left in a bucket or tub for days without losing its ability to form bubbles. Bubble mixes are best made at least ½ hour before you need them, so they can settle.

You’ll need:

6 cups (or parts) water
2 cups (or parts) Dawn dishwashing detergent
3/4 cup Karo or other light corn syrup
Measuring container
Large tub, bucket or pan (large enough for the wands to fit inside)

Use Dawn brand dishwashing detergent, if you can find it, for large, firm bubbles. Joy is second-best.

If you’re using the same container to measure both the water and the detergent, measure the water first to prevent detergent foaming in the container.

If your water is very hard, you may want to use distilled water.

Stir the solution gently. It should be smooth, not sudsy or foamy.

How to Blow Big, Strong, Long-Lasting Bubbles

Choose good wands or materials.

Ensure that the bubble and bubble tool only touch wet surfaces.

If the day is too windy for big bubbles, seek a windbreak and form bubbles near that.

Make sure the bubble mix is inside the wand or tool.

Blow or wave the wand gently, just enough for the film inside to catch some air. Blowing too hard can cause a bubble to break, or can create many small bubbles instead of one big one.

Make Your Own Wand or Bubble Maker

There are wonderful commercial wands with very large openings in whimsical shapes, available at toy stores and fairs. You can also make your own large homemade wand.

You’ll need:

Two or more wire hangers

Bend a clothes hanger into the shape of a circle.

Unfold a second hanger as straight as you can and attach it to the first to form a handle.

 Create a Bubble Window Maker

You’ll need:

Cotton string with some absorbency

Plastic straws cut in pieces

Run a length of string through the straws in a continuous line.

Leave some string between each straw and knot the string ends together.

See what shapes you can make with the straws.

Try a “bubble window”. When making the window, lift the solution out of the bucket or pan in one plane and at an angle, which will help the film remain within the shape. Put two wet hands through a bubble window and shake hands!

 Slow Tip: Search around your house for other good bubble makers. Six-pack rings, plastic strawberry containers, funnels, cookie cutters, mason-jar rings, rubber bands, pipe cleaners, strainers, even fly swatters can all make fine bubbles. Often items with many small openings will produce masses of fun bubbles. Your hands are another wonderful bubblemaker — especially if they are wet.

More Bubble Fun

Bubble Clusters: Put a small amount of bubble solution on a pie tin or cookie sheet. Blow into it with straws to create multiple bubbles in clusters.

Bubble Within a Bubble: Blow a bubble with a straw. Remove the straw from the bubble. Making sure the straw is wet, gently insert it into the top of the bubble, so it enters at a 45 degree angle. Blow gently to form another bubble.

Celebrate the Winter Solstice

There’s something about the solstice, the precise and dramatic moments when one season moves into another. These moments allow us to pause and reflect on the turning of the year, as well as mark the unique joy of each season in numerous small ways.

The winter solstice (December 21 this year for those in the Northern Hemisphere) provides a special opportunity to slow down during the hectic holiday season.

Marked by the longest night and shortest day of the year, winter officially begins at the moment that the sun is directly over the Tropic of Capricorn. For the many who yearn for longer days, this is the cheering moment they start coming back, little by little, as the North Pole gradually begins to tilt closer to the sun. (I truly enjoy the whole year as it occurs.) Of course, those in the Southern Hemisphere are celebrating their summer solstice and their longest, sunniest day. This is a great site that explains the solstice.

In ancient Rome, the extroverted citizens celebrated the winter solstice for a full and rowdy week called Saturnalia. Though (much) milder in character, my family makes a habit of welcoming each summer and winter solstice with songs, stories, rituals and food, much the way people of many cultures have been bearing witness to the changing seasons and honoring life’s mysteries for thousands of years.

Looking for some simple ways to celebrate the winter solstice with your family? Try these:

  • Take a walk or have a family game night on the year’s longest night.
  • Celebrate the sun’s return by making or eating sun-colored foods, such as oranges and frosted yellow cupcakes.
  • Use an orange half as a candle holder by hollowing out space for the candle in the orange’s center, and enjoy the light together.
  • Place gold-covered toys or chocolate coins in bags and surprise children with them at night or during the morning after the solstice.
  • Take a walk at sunrise to greet the return of longer days.
  • Take a cue from Scandinavia, where some families place all their shoes together at the winter solstice, in the hope of living in harmony throughout the year.
  • Do a solstice spiral dance to welcome winter or summer (instructions below).
  • Summer solstice celebrants, greet the season outdoors and make a wish on the first star that appears on the year’s shortest night.

Spiral Dance

Gather in a circle and hold hands. Sing or chant simple songs to honor the earth and the changing season while moving slowly in a circle. Have a leader break one handhold and lead the group in increasingly smaller circles within the larger one to form a spiral. Some of our favorite spiral songs:

Wearing Our Long Tail Feathers

The boundaries of the earth,
The planet of our birth,
The sacred Mother Earth.
We circle around,
We circle around,
We circle around the universe,
Wearing our long tail feathers
As we fly.

Witchi Tai Tai

Here’s some great information about cultural and religious celebrations of winter and solstice around the world. Some civilizations, like the ancient Incans and the Chinese, begin their new years at the winter solstice. (Interestingly, the ancient Mayan calendar marked the new year not at winter solstice but in May, the high point of the agricultural year.) However you choose, join in the global celebration of the solstice, the year’s longest night (or day), and perhaps the return of the light.

8 Fun Things to Do While It’s Still Summer

Although school has started or will soon start for many, Fall doesn’t officially begin until September 22. That still leaves plenty of time to get outside and enjoy some of summer’s simple pleasures.

Whistle with a blade of grass

This classic pastime is fun to do when sitting in the grass with friends or family, or even by yourself.

Find the widest blade of grass you can. It should also be long and relatively thick.

Hold your thumbs upright, so they face toward you and touch at the knuckles and tips.

Place the grass between your thumbs, holding it so that the piece of grass is taut and there is a little air on each side of it.

Purse your lips so that a small but strong bit of air comes out of their center and blow into the opening where the grass is.

Make a daisy chain

This is a charming activity to do while relaxing in a grassy meadow or field. If you’d like, make your chain into a necklace or crown.

You’ll need:

• Small daisylike flowers (pick only from grassy fields where they are in profusion, as it may not be okay to pick flowers in some protected areas.)
• Pin (your fingernail will work as well)

Carefully prick a pin or fingernail into the daisy’s stem, approximately
1/3 of the way down from the flower.

Gently thread a second daisy stem through the hole, taking care not to break it. The second flower head now rests atop the first stem.

Continue to add daisies to the chain, until you have achieved a length you like. Attach the ends, if desired.

Catch fireflies

They’re called fireflies, lightening bugs, glowworms, and moon bugs. They wink at us with their intermittent glow in darkening skies on humid nights. For many, seeing and catching them is the ultimate summer nature experience.

You’ll need:
• Flashlight
• Net
• Clear, lidded jar, with a few holes punched into the lid, using a hammer and nail— if you don’t have a lid, use plastic wrap, punched with small holes and secured with a rubber band
• Leaves or a moistened paper towel, placed at the bottom of the jar

Find a humid environment— the best are fields or forests with bodies of water nearby, although fireflies are also found in parks and backyards. Though fireflies live all over the world, they are rare in the western United States.

Turn off all surrounding lights, if possible. Let your eyes adjust to the dark.

If you don’t see fireflies, turn a flashlight on and off in a flashing motion to attract one.

When you spot a firefly, place the net over it and gently transfer it into the jar.

You may be able to catch it right in the jar. Fireflies are not dangerous to touch, but be careful not to crush them.

Keep your fireflies for a short time, releasing them again the same or the next night, to ensure their survival.

Skip a stone

Learning to skip stones takes a lot of practice and perseverance, but it’s an impressive skill once you master it.

Find a calm body of water.

Find a smooth, flat, lightweight stone. The flatness will allow it to skip; the lightness will allow it to be tossed a long way.

Balance near the water and fling the stone with the wrist, as you would a Frisbee.

Try to have the stone enter the water at a 20° angle. If the angle is smaller, the stone will bounce but lose energy. If the angle is bigger, the stone will sink.

Keep practicing!

Play tag in a park

There are so many fun tag games, you needn’t limit yourself to basic tag. Try this fun variation:

Blob Tag

Once a player is tagged by the person who is “it,” the two join arms and become a blob, which chases players together to try to tag them. Other players who are tagged also join arms and become part of the blob. Some play a version in which, when the blob reaches four people, two split off to become a new blob. The last person standing alone becomes the new “it.”

Camp in your backyard

Camping out in sleeping bags is fun any time of year— in a backyard, on a porch or balcony, even on the living-room floor. Wherever you roll out the sleeping bags, enjoy some traditional camp activities:

Sing traditional or silly campfire songs like Go Bananas, She’ll Be Comin’ Round the Mountain, Boom Chicka Boom, and Rose Rose.

Make shadow puppets by shining a flashlight onto a tent or house wall. Hold your hands between the light and the wall in various shapes like these:

Rabbit— Make a fist with one hand. Place the other palm
over it and make a peace sign (for ears) with two fingers.

Hawk— Link your thumbs together, with your hands facing
away from you. Stretch out your fingers and hands and flutter
them like wings.

Make s’mores, banana boats, hobo popcorn and other classic camp treats.

Gaze at the Stars

With its possibilities for clear skies and warm nights, summer often offers the best opportunities to get out and gaze at the stars. Begin to get to know the night sky by locating a few key constellations, like the Big Dipper (visible over much of the Northern Hemisphere in summer) and orienting toward those. The Big Dipper appears like a ladle (bowl) and handle. To find the North Star (Polaris), extend an imaginary line up from the top corner of the ladle that is furthest from the handle. Polaris is in turn on the handle of the Little Dipper, which appears upside down and facing the opposite direction from the Big Dipper. (In the Southern Hemisphere, orient to the Southern Cross.) If possible, buy a portable star chart or get acquainted with the major constellations in your area and season. Consult your chart to find other stars and constellations, based on the ones you’ve already found.

Make summer fruit jam

Head to a farm, backyard or market while summer fruit is at its ripest, and pick your favorite peaches, apricots, plums, figs or berries and then make them into jam. If you’ve never tried canning, you may discover a terrific new hobby as you make family memories and lovely jars of jewel-colored jam that you’ll be able to give as gifts or open in the depths of midwinter to remind you of sunny summer.

Stir up Some Triple Berry Jam

Canning has made a big comeback in recent years. For good reason— it’s a fun, easy, and economical family or group activity that even offers some kitchen science, as you watch the mixture transform from liquid to gel. Canning is productive too, and you can’t help but feel good when you see the bumper crop of jars filled with jewel- colored jam or other goodies that you’ll be able to give as gifts or eat all year long.

Anna started making jam with me the summer she was three years old. We had a favorite blueberry farm, about an hour from our house, and we began to travel there each summer during the extremely short (about two- week) blueberry season, to collect ripe berries and sit at a small counter to enjoy the freshest blueberry ice cream imaginable. If you are fortunate to have berries available, now is the time to make jam. Versions of this recipe can be made with many fruits. Consult pectin packaging or canning books or sites for recipe proportions.


You can make excellent jam from most fruits and berries. Because Michael is from Pennsylvania blueberry country, I absorbed his love of blueberry jam, which can be phenomenal and offers a strong taste of sunny summer in the depths of midwinter when you spread just a little on toast. Raspberry jam is wonderful to use in holiday cookies and tarts. Peaches and apricots are also
fun to work with and make excellent jams and chutneys. The jam we turn to most often, though, is the rich, complicated, and flavorful triple- berry jam.

You’ll need:

• Canning jars, half-pint size preferable (available in supermarkets
and hardware and drugstores—you shouldn’t use
old household jars, as they might be scratched)
• New canning lids and new or used bands
• Wide- mouth funnel and jar lifter (available at many
hardware and drugstores)
• Ladle and tongs
• Pot holders, dish towels or cloths, and sponge
• Mixing bowls
• Wooden spoons
• Heavy- bottomed pot for cooking
• Very large pot or canner that includes an inch of water
above the jars and plenty of room for the water to boil, and
a jar rack or cake- cooling rack
• 5 cups strawberries, raspberries, and blackberries (3
pints strawberries, 1 1/2 pints raspberries, and 1 pint
blackberries) at peak ripeness, chopped (with knife or food
processor, see below)
• 7 cups sugar
• 1 box dry pectin

Wash the jars, bands, and lids in soapy water.

Place the bands and lids in a saucepan and simmer for five minutes, without boiling. Turn off heat and leave them in the hot water until ready to use.

Place rack into the pot and place jars on the rack (to prevent them from breaking in the pot). Fill the pot with water to an inch above the jars. Bring the water to a boil and keep the jars in a rolling-boil bath for ten minutes. After that, they sit until ready to be used.

Chop the berries by hand or in a food processor. If using a processor, pulse the berries in small batches so you end up with fruit bits rather than a puree.

Measure sugar into mixing bowl.

Add berries and pectin to the heavy-bottomed pot and mix.

Bring to a full rolling boil over high heat, stirring constantly.

Quickly add sugar and continue to stir. Return to a full rolling boil. Then boil, stirring, for one minute.

Remove from the heat and skim off any foam with a ladle.

Remove the jars from their bath with tongs and a pot holder, and place them upright on a dish towel. Ladle the jam mixture into the jars, leaving 1/4of air, or headspace. Wipe the rims and threads with a wet cloth. Top with lids and screw on the bands.

Place the jam-filled jars back into the canning pot, and boil again for ten minutes to process, or additionally sterilize, them.

With certain vegetables and meats, the sterilization process is especially crucial to prevent food poisoning. Although the trend has moved away from the necessity of processing most fruit

jams, and just leaving them standing when filled, I still like to boil them a second time, the old-fashioned way.

Let filled and processed jars stand for approximately 24 hours at room temperature. Do not retighten the bands.

You know you have a good seal when you push on the lid and it doesn’t pop back. If the seal is not good, the jam can be stored in the refrigerator for three weeks. Otherwise, it can be stored in a cool, dark place for up to two years.

Label with the date and type of jam, particularly if you plan to make more.

Yield: Approximately 5 half pints.

Note: It’s important to understand and follow food canning safety guidelines.

There are lots of ways to make jam with reduced or alternative sugar. One way is to cut out the pectin, reduce sugar by about 1/3,  and boil the jam for 10-15 minutes until it reaches the jell point on its own. Another is to use a low-methoxyl pectin, such as Pomona’s, available at natural food stores. Jam made this way tastes terrific. This recipe makes berry jam.

You’ll need:

• 4 cups mashed berries
• ¼ cups lemon juice
• ½ – 1 cups. honey OR
• ¼ – 2 cup sugar

Low methoxyl pectin and calcium water, per package instructions.

How to Choose a Great Summer Camp (It’s not too late!)

My family and I all adored summer camp, which has provided each of us with many of our warmest childhood memories. Camp is a unique and special place, often quite unlike any other in one’s life. Camp can be a place to try new things, experience nature in an unmediated and unhurried way, meet people one wouldn’t ordinarily be exposed to, experience personal growth and, above all, have a lot of pure, all-out fun.

There are many wonderful summer camps and, although we’re inching toward summer, many still have openings. It’s not too late to choose a great one. So, how do you choose?

Involve Kids in the Decision

Unless they’re very young, most children will have an opinion about the type of camp experience that appeals to them. Try to have some brochures, DVDs or web sites you can look at together. These might come from a local camp fair, or be downloaded from the Internet. Sometimes the simplest things capture children’s imaginations, such as the local Park and Rec. program that offers an Aloha Week with water play. At the same time, exposing them to a new experience, at the right age, can be very beneficial.

Older children usually know when they’re ready for a “sleepaway” camp, as opposed to a day camp. Day camp experience can help prepare kids for sleepover camp, particularly as a lot of day camps offer overnight outings of increasing length and distance as children get older.

Evaluate Your Family’s Needs

Are both parents working all summer? Consider a camp program or programs that cover the entire season, and/or long days — some camps offer after-care; inquire about additional costs. If you have some flexibility and your child wants to try a couple different types of specialty camps, then perhaps two or more shorter camps will fill the bill. On the other hand, some camps recommend registering for a longer program, so as to have adequate time to adjust and really get comfortable. Discuss the family’s needs and desires.

Camp costs will also factor into your decision. These vary widely. Some camps offer “campership” (scholarship) opportunities..

In addition, many day camps offer bus or van transportation, which could cut down on driving time for the parents. (And the great news is that children usually regard the camp bus as part of the fun. Take it from someone who has been banned from singing 100 Bottles of Beer on the Wall.) Transportation also often carries an extra cost.

Discuss the Camp’s Activities

What does your child envision doing? Whether it’s theater or ceramics, water sports or group games, you’ll want to make sure that activity is offered. Although it’s great to try new things, it can be comforting when some favorite activities are part of the particular camp. Something else to consider is whether the camp is a general camp with lots of activities, or a specialty camp. Both kinds of camps offer tremendous opportunities. First-time campers may enjoy a traditional camp as a way to get their feet wet and begin the camp experience. Also, a traditional camp offers unique experiences children may not have in any other area of their lives. Some specialty camps also offer swimming and outdoor games, as a way to break up the main activity or to get everyone outside for some physical play. If a child is leaning toward a specialty camp, be sure they know that most of the day will be devoted to the primary activity.

Find Out About the Camp’s Structure

Some camps schedule all activities, and others allow for free choice. When age-appropriate, discuss your child’s preferences with him or her. The right match can go a long way toward a successful camp experience.

Explore the Camp’s Setting

How rustic is the camp? Do children sleep in tents, cabins or dorms? Even with day camps, there are camps that meet in local parks and camps in which children travel daily to outdoor adventure spots or amusement parks. What kind of setting appeals to your child and fits his/her comfort level? Inquire about sleeping and dining facilities, and sports and recreational facilities, as well as the camp’s physical setting.

Try to Get a Sense of the Camp’s Philosophy

Although this may be difficult to discern without spending some time in a camp session, there are some questions you can ask that may help you figure out if a camp is a match for your child and family. These include:

What qualities do you look for in a camp counselor?
Where do campers come from?
What ages and genders typically attend the camp?
How long has the director/camp been in operation?
What percentage of campers usually return?
How are bunks or groups determined?
How competitive are camp activities?
Are campers encouraged to try new things?
Do many activities involve the whole camp?
What kind of food is served?
Does the camp have a religious affiliation?
What is the camp policy regarding electronics, spending money, medication, letters from home and parent visits and phonecalls?

Consider the Camp’s Role Regarding your Child’s Social-Emotional Needs

The choice of camp can be especially critical if your child has special needs. Research or ask the camp director whether or not special needs are addressed. Find out, too, about social and emotional needs. Camps have different policies around homesickness and phonecalls to and from home. Find out how the camp handles campers who are not enjoying themselves or who are having trouble fitting into the activities or friendships.

Find Out About the Camp’s Safety Record and Practices

Of course parents want to feel secure when kids are away from home or trying new activities. Here are some questions to ask regarding safety:

Is the camp ACA accredited? (This is a very important camp accreditation from the American Camp Association, which holds high standards for safety and programming. Note that there are fine non-ACA-accredited camps as well.)
Is instruction given in swimming and other new activities?
Are swim instructors certified?
What is the ratio of staff to campers? (According to the ACA, there should be one counselor for every 5-10 campers, depending on ages and needs.)
What is the training for counselors?
What are the ages of the counselors?
How does the camp ensure safety?
What is the general emergency plan?
Are there nearby medical facilities?
Do staff members have medical/emergency training?
Are there outings away from the camp site and, if so, what are the arrangements for transportation, facilities, supervision, etc.?

Find Out About Practicalities

Are there additional costs or fees?
Is there a refund policy?
Will the director supply references?
Can you visit the camp in advance? (Or, if not, is there a video tour?)

Camps can offer lots of great, new experiences in fun, and sometimes beautiful, settings. Some children see the same camp friends year after year, and many grow up with fond memories of their special camp time. It can be wonderful to stick with a favorite camp or seek a new experience. The right focus in spring can help your child and family have a fun and memorable time in summer.

Just added: San Francisco Bay Area folks, I just learned about a very cool camp called Camp Galileo that combines art, science and outdoor activities around weekly themes. They have programs for kids ages pre-K to 8th grade, in 38 locations. The camp philosophy encourages fun and learning through experimentation, discovery and innovation. Each camp is a week long, which allows for flexibility. Extended care is offered, too, to help working parents. Campers through 5th grade are grouped by age and participate in one of four themed camps: Medieval Adventure, Space Odyssey, African Safari and (Design your own) Amusement Park. This tasty, colorful melange never fails to summon summer, while providing a few helpings of vegetables or a fool-proof side-dish that works with fish, chicken, lamb, noodles, and more. It works great hot or cold, and keeps well, refrigerated, for about two  weeks. Ever since I first lived on my own in college, it has been the rare period when I haven’t made some.

Food historians generally date ratatouille to 18th century France, and to the area of Provence, and the town of Nice, in particular. Its name hails from the French verb, touiller, which means “to stir, mix, or toss”.

My own ratatouille has changed a lot since the days when I cut cubes of zucchini and eggplant and set them to boil in a pot of canned tomatoes. It’s as if the recipe itself has both mellowed and allowed for more complication, just as a good pot of ingredients, over time, coalesces into an especially flavorful whole. Diehard ratatouille purists may insist on sautéing each ingredient separately, but here you get the same effect, while also saving a little time.

6 Tbsp. olive oil, or more as needed
1 onion, chopped
6 cloves garlic, pressed
3 bell peppers, in assorted colors, chopped
1 large eggplant, chopped
2 medium zucchini, chopped
2 summer squash, chopped
20 or so olive halves
2 14 oz. cans tomato chunks, or equivalent fresh tomatoes
2-4 tsps. each oregano and thyme
Feta or parmesan cheese, optional

Place eggplant pieces in a baking dish.

Toss in 4 Tbsp. oil and bake, uncovered, at 350 degrees for 25 minutes or until soft.

Heat remaining 2 Tbsp. oil in heavy skillet over medium high heat.

Add onions and sauté, turning occasionally, just until golden.

Add pressed garlic and sauté.

Mix in peppers, cooked eggplant, zucchini, summer squash, and olive halves.

Sauté whole for 10-15 minutes.

Add tomato chunks and spices and heat the mixture to just boiling. Reduce heat to medium and cook for another 5-10 minutes.

Serves 4-6 as a main course. The recipe can easily be halved or doubled. Serve plain, hot or cold, top with feta or a dry Italian cheese like parmesan, or spoon over pasta.

Slow Down for Summer: Fun and Simple Outdoor and Seasonal Activities

I had such a great time on the Slow Down for Summer webinar that I did with KaBOOM! and with the many participants. We shared tons of Slow Summer ideas that emphasized fun and ease over equipment and preparation. These include old-school playground games that are ripe for a comeback and can be played most anywhere, crafts to get you outside on a nice summer day, activities to help kids observe and enjoy their surroundings (be they nature or city), and garden and harvest projects to help kids appreciate the cycles of nature and of life. There was so much information and so many wonderful ideas, that we just skimmed the surface in the time allotted. I think it got everyone thinking about the possibilities for wonder and fun and how to create more of each in their everyday lives. I know I came away with some great ideas!

Happy Summer! Easy Summer Solstice Cupcakes

Summer Solstice, the longest day of the year and the beginning of the summer season, is upon us June 21 this year, at 17:17 Universal Time, or 1:17 pm on the U.S.’ east coast, 10:17 am on the west. Throughout the Northern Hemisphere, it can be marked by Midsummer festivals, especially in Scandinavia, where people celebrate with maypoles that honor nature’s bounty and bonfires that recall the heat and warmth of the sun. Still other cultures have solstice rituals that honor the sun, the feminine and the masculine.

Here in the San Francisco Bay Area, my family often attends a summer solstice celebration at Muir Beach, hosted by the Muir Woods National Monument park rangers. We enjoy a bonfire, nature storytelling and campfire songs, and a ritual walk around the fire, holding stalks of sweet flowers and herbs, and then throwing them into the fire, to greet the new season and also let go of anything that no longer serves us.

An easy way to celebrate Summer Solstice, whether your gathering is a large one or a cozy one, is to make Summer Solstice Cupcakes. This recipe comes from the terrific book, Circle Round:

Just as Winter Solstice gives birth to the light, Summer Solstice, with its day that never seems to end, holds the seeds of darkness. We discover darkness in the bits of chocolate concealed inside this sunny cupcake.

1/2 C butter (one stick) softened in the summer sun
1 C sugar
2 eggs
1 t. vanilla extract
2 C flour, sifted first and then measured
pinch of salt
2 t. baking powder
1 C milk
1 C chocolate chips

Cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Add vanilla. Mix together the flour, salt, and baking powder. Add half of the dry ingredients to the wet mixture and stir in. Follow with 1/2 cup milk, then the other half of the flour mixture and the rest of the milk. Stir in the chocolate chips.

Use paper liners, or grease and flour cupcake tins. Bake for 25 minutes in a preheated 375′ oven.

Makes 20 to 24 cupcakes.

Because of the sweetness of the cake and chips, these don’t need frosting, but you can certainly add it, in a solid color or a cheery sun or flower design.

Blueberry Thursday: Blueberry Corn Muffins

In the spirit of keeping those summer fruit recipes coming, here’s a recipe that combines two wonderful high-summer favorites, blueberries and corn. These muffins are inspired by both the Silver Palate Good Times Cookbook and the Williams Sonoma Muffins cookbook and bears a bit of each.

Preheat oven to 400. Line muffin tins with paper.

You’ll need:

1 C. flour
1 C. cornmeal
1/3 C. sugar
2 1/2 Tbsp. baking powder
1/4 tsp. salt

1 C. buttermilk
1 egg, beaten
1/3 C. mild cooking oil, like canola

1 2/3 C. blueberries

Sift first 5 dry ingredients together.

In a separate bowl, mix buttermilk, egg and oil.

Combine the wet into the dry ingredients, being careful not to mix too much. (This last is important for a pleasing texture.)

Fold in blueberries, just to combine.

Fill muffin cups 2/3 full.

Bake at 400 for 15-20 minutes, or until a toothpick inserted in a muffin’s center emerges clean.

Let cool and enjoy these tasty, hearty muffins!
